Among the many pleasures of summer are the intense flavors and varieties of summer fruits and vegetables. If you are a vegetarian, or simply want to eat healthier during the hotter months, this class will focus on vegetables and fruits that are at their peak during the summer months. This menu does include dairy products.
Fava Bean Crostini; Roasted Beet Salad with Walnut Vinaigrette; Shaved Fennel Salad with Citrus Dressing; Roasted Corn Soup; Spanish Tortilla with Savory Summer Vegetables; Corn & Cheese Tamales with Smokey Chile-Tomato Salsa; Peach and Almond Crostata.
