Farm To Fork Cooking Vacation August 4 - 8

We have been anticipating the debut of this marvelous class for quite some time.  Our new Farm to Fork Cooking Vacation is designed for students who’ve already taken Basic Cooking Techniques and are ready for a more rustic, ingredient-focused course highlighting local and seasonal foods at their peak of ripeness.

 

During each six-hour class, you and your fellow students will prepare a wonderfully fresh, multi-course meal building on skills previously learned in Basic Tech, while also reconnecting with and acquiring many beloved forgotten skills passed down through generations not so long ago.  Our goal is for students to grow their appreciation for the value of food, a love for its taste and beauty, and to be more connected to the seasons and the cycles that bring forth nature’s bounty.

 

This course was designed, and will be taught by Chef Michael Montgomery, who personally lives by the Farm to Fork eating philosophy.  Michael’s passion for seasonal, fresh, local Colorado products will make you want to get back in the kitchen for another shamelessly flavorful cooking vacation. 

*Prerequisite: It’s a requirement that all students registering for this course have taken Basic Cooking Techniques.

Grilled whole fish stuffed w/ Brussels sprouts, leeks, and bacon w/ apple cider pan sauce; Cherry galettes w/ rosemary cream; BBQ bison sandwiches on homemade potato rolls w/ dill pickle and slaw; Drunken beans; Bison breakfast sausage & corn pancakes served w/ seasonal fruit jam; Rack of lamb with rosemary rhubarb chutney; and Roasted plums w/ pink peppercorn balsamic ice cream.
