Explore the magic of pastries and baking. Learn the art of sweet yeast breads and examine techniques for using other leavening agents. An entire session is devoted to baking with chocolate, including creating extraordinary chocolate cakes and pastries. Practice the fine points of layered cakes and tortes, delicate genoise, buttercreams, mousses, rolled cakes, pie pastry, tart shells, cream puffs and get high-altitude baking tips.

· Making baked custards and mousses
· Working with chocolate
Sample Menu
Cream Puffs with Crème Pâtissière and Chocolate Glaze; Chocolate Almond Roulade with Strawberries; Raspberry Hazelnut Genoise; Fruit Tart with Pastry Cream; Apple Galettes; Lemon Curd Tartlets; Pots de Crème au Chocolat; Coconut Layer Cake; and Chocolate Truffles. A light meal will be served each day.
