Pastry Skills is an intensive 10-week course designed to address the needs of the serious home baker who wishes to improve their technical skills and learn both classic and innovative pastry and baking techniques. Pastry Skills offers a significantly increased level of explanation and application in the theory and technique of classic French pastry. This topic-based curriculum is designed to enhance your baking techniques, confiedence and competency.

• Organization, techniques and methodology
• Recipes adjustments for high altitude baking
• Flavor combinations and textures
• Design, garnishing and presentation

The curriculum includes:

• Working with chocolate - tempering & decorative work
• Intermediate cake decorating
• Entremets - assembled and filled cakes & tortes
• Advanced frozen desserts
• Candy making
• Petits Fours - working with miniature, fine detail piping & fondant
